Yes, these are amazing little babies. When I first started searching for recipes that used what I have at home, I was a bit dubious about mushroom lentil burgers. But since I really do not like doing quick trips to the store for one item, I decided to persevere. And yes, awesome taste treats. Yummy, tasty, and great on the budget. The inspiration for this recipe came from ohmyveggies.com (http://ohmyveggies.com/recipe-lentil-mushroom-burgers/) and I changed it up a bit.
So, I took 1/2 cup brown lentils and cooked them in 1 cup water and a little salt. I cooked them gently until almost tender. There was a little water in the pot and I stirred in 1/2 cup oatmeal and 2 generous tablespoons bulgur, along with 1/2 T. dried onion flakes. After covering the pot, I let it set for a while. Next, I took an 8 oz. package of mushrooms and sliced them thinly. Heating 2 T. olive oil in a small skillet, I stirred in the mushrooms and seasoned with salt, pepper, and garlic powder. When the mushrooms had wilted and were cooked through, I let them cool. Next, everything went into the processor and mixed it a few seconds. I pammed a cooking sheet and shaped the mix into five good sized “burgers”.
At the last minute we were invited out for dinner and so I covered them and refrigerated the patties overnight. Next day I preheated the oven to 400 F. and baked them about 30 minutes, flipped once and continued baking about 5-10 minutes longer. Yummy!!!!! If cooking right after they are mixed up, the total cooking time would probably be 30 minutes, but since they had chilled overnight it took a little longer. These were really quite good.
